Arugula Spinach Pesto Pasta

"I know what I want for dinner. I’ve been thinking about it since lunch.” – unattributed but totally relatable

Stress Scale: ✅✅ | Prep Time: 5 min | Total Time: 20 min  | Servings: 2-3

INGREDIENTS

  • ½ lb pasta of your choosing (I’m a sucker for farfalle)

  • ½ cup raw walnuts

  • ¾ cup olive oil

  • 1 T + 1 t garlic, minced

  • ½ t lemon juice

  • ½ t maple syrup

  • 1 cup spinach

  • 2 cups arugula  

  • Salt to taste

  • OPTIONAL: 1/4 cup grated parmesan cheese (Recommended brand: Violife)

DIRECTIONS

  1. Prepare pasta as directed. (Drain but don’t rinse once complete.)

  2. Place walnuts in high-speed blender. Pulse until finely chopped.

  3. Add all remaining ingredients to high-speed blender (in the order in which they are listed).   Blend until you get a beautiful green, thick sauce.

  4. Add additional salt, if needed.   

  5. Toss warm pasta with pesto.

  6. Top with grated parm, if you like. 

TIP: This pesto is an all-around dynamo, try it over roasted vegetables!
