Bread Pudding with Praline Sauce

“Where has this been all my life?” – Vegan Mary

Stress Scale: ✅✅ | Prep time: 10 min | Total time: 40 min | Servings: 6

INGREDIENTS:

  • 12 slices wheat bread, stale preferred (leave out overnight) 

  • 1¼ cup brown sugar

  • 1 (7 oz.) can evaporated milk (I used Let’s Do Organic brand)

  • 1 t butter

  • 1 t cinnamon

  • 1 t vanilla

  • 1 cup berries

  • ½ cup pecans, toasted (toss in a bit of olive oil, bake at 350°F for about 5-7 minutes)

  • Cooking spray

  • Pinch salt

DIRECTIONS:

  1. Preheat oven to 350°F.

  2. Spray 9x13 casserole pan with cooking spray.

  3. Tear bread into chunks, place into pan. Bake for 30-40 minutes.

  4. In small saucepan, mix brown sugar, evaporated milk, butter, and cinnamon. Cook for 5 minutes over medium heat, stirring occasionally.

  5. Remove from heat. Add vanilla, pecans, and salt.  Let sit while bread bakes

  6. Once bread is golden brown color (and slightly crunchy), remove from oven.

  7. Pour sauce over the bread. 

  8. Serve with fresh berries and love. 

TIP: Try to share. This is so damn delicious, you may want to just keep it all for yourself!
