Green Goddess Veggie Tray

“The normal food of man is vegetable.” – Charles Darwin  

Stress Scale: ✅ | Prep time: 10 min | Total time: 10 min | Servings: 4

INGREDIENTS:

  • ½ cup green goddess dressing (I am currently obsessed with Trader Joe’s)

  • 2 T mayo

  • 2 T nutritional yeast

  • Handful of green beans 

  • Handful of snap peas

  • Handful of broccoli, cut into bite size pieces 

  • 2 stalks celery, cut into sticks

  • 1 green pepper, cut into sticks

  • 1 cucumber, sliced   

  • ½ fennel bulb 

DIRECTIONS:

  1. Fold together dressing, mayo and nutritional yeast. Place in fancy bowl or ramekin.

  2. Place veggies on platter or tray of your choosing.

  3. Serve together in perfect harmony.

TIP: Monochromatic veg trays are stunning! Try a red one for V-Day or Christmas: tomatoes, red bell peppers, radishes, beets, and radicchio. Pair with a red pepper hummus to keep the theme going.
